50ml balsamic vinegar
sea salt and freshly ground black pepper
20 orange segments (about 3 oranges), cut into 3-4 pieces, excess juice reserved
1/2 small watermelon, finely diced
200g marinated feta, diced, oil reserved
handful of mint leaves, thinly sliced
Put balsamic vinegar, a good pinch of salt and pepper and any reserved orange juice in very small saucepan. Slowly bring to boil, then reduce heat. Simmer gently for about 2 minutes or until it has reduced and thickened. Remove from heat and allow to cool completely.
Divide watermelon, feta and orange between your serving spoons. Dress each with a few drops of the reduced balsamic dressing, top with mint and drizzle over reserved oil from feta.
