Made in the Thermomix, this foolproof recipe delivers deeply fudgy centres with just-set edges, striking the perfect balance between gooey and firm. A combination of dark chocolate, Dutch cocoa and rapadura sugar creates a bold, complex chocolate flavour, while butter and vanilla add irresistible richness. Ideal for entertaining or make-ahead desserts, these brownies slice cleanly and serve beautifully. Finish with a light dusting of cocoa powder and enjoy them as they are, or pair with ice-cream for an elevated treat everyone will love.

Method
Preheat oven to 160°C (fan-forced). Grease and line a square cake tin (20cm x 20cm) with baking paper.
Place sugar into mixing bowl and mill 4 sec/speed 9.
Add baking powder, cocoa and flour then mix 5 sec/speed 10. Transfer to a bowl and set aside.
Place chocolate into mixing bowl and grate 2–4 sec/speed 5 or until chopped into approximately 1cm pieces. Transfer to a separate bowl and set aside.
Place salt and butter into mixing bowl and heat 2–3 min/60°C/speed 2 until butter has melted. Allow mixture to cool to 37°C in mixing bowl (see Tip).
Add reserved cocoa mixture and eggs, then mix 30–35 sec/speed 3 until well combined. Scrape down sides of mixing bowl.
Add grated chocolate and vanilla, then mix 20 sec/speed 4, until just combined.
Pour mixture into prepared tin and spread evenly with a spatula. Bake for 50–55 minutes, until firm on the edges and slightly soft in the centre.
Allow to cool completely in tin (approximately 45 minutes). Dust with extra cocoa powder before cutting into squares.
TIP
To check that the mixture has reached 37°C in step 5, remove mixing bowl from Thermomix base and set aside to cool. When you return the mixing bowl to Thermomix base the screen will indicate the current temperature of the mixture in the mixing bowl.
