These pistachio amaretti biscuits are crisp and delicately cracked on the outside, with a soft chewy centre and an irresistible nutty flavour. A hint of lemon rind adds freshness, while matcha gives the biscuits a subtle earthy note and a beautiful pale green hue. Naturally flourless and quick to prepare, they require just a handful of ingredients and are ready in under half an hour. A generous coating of icing sugar creates their signature crinkled finish as they bake. Add them to a dessert platter and serve with coffee or tea.

Ingredients

Method

1.

Preheat oven to 180°C (160°C fan-forced). Line 2 large baking trays with non-stick baking paper.

2.

Lightly whisk egg whites and salt in a large bowl until foamy. Add sugar, lemon rind, pistachios and matcha powder and mix well until combined.

3.

Scoop tablespoons of mixture and roll into balls. Roll in icing sugar. Place on baking trays 3cm apart and bake for 12–15 minutes, or until they looked cracked on the surface. They will continue to be soft and will firm on cooling. Keep for 5 days in an airtight container.
