Method
Using a fine-mesh sieve, drain lychee syrup into mixing bowl and set lychees aside.
Add sugar, rum, lime juice, ice cubes and 6 lychees, then blend 20 sec/speed 10. Strain through a sieve into a serving jug.
Divide remaining lychees between 6 glasses. Add 1 lime wedge and 5 mint leaves to each glass. Fill each glass half full with extra ice cubes, divide rum mixture between glasses and fill with soda water. Stir to combine. Garnish with extra mint leaves and serve.
